Whipped Feta with Cucumbers
serves 4
Ingredients
- 4 oz feta cheese, crumbled
- 2 oz cream cheese, softened
- 1 T heavy cream
- 2 T olive oil
- 2 t lemon juice
- 2 ea cucumbers, halved, seeded, 1/2-in slice
- 1 t oregano
- toasted pita or baguette slices
Instructions
- Puree the feta, cream cheese, cream, 1 T olive oil, and 1 t lemon juice until smooth and creamy. Add cream if needed. Season to taste. Refrigerate for 1 hour.
- Toss the cucumbers with 1 T oil, 1 t lemon juice and oregano. Season to taste. Cover and chill for 1 hour.
- Plate and serve the cheese and cucumber mixtures with the pita or baguette slices.
